NEW WEEK, WHO DIS??

You know when you have one of those weekends that reminds you that you're doing something right in your life?

Well that's certainly how I feel sitting here in front of my TV anxiously waiting for the newest episode of Game of Thrones to upload onto my HBO Now account. 

Knowing that it was important to me to get back on track next week, I woke up Saturday morning, ready to carpe diem! I made my grocery list AND went shopping all before noon so that I wouldn't have to spend time on Sunday fighting through the crowds at Trader Joe's. `

After I was finished being a responsible adult, I headed over to Clinton Hall in FiDi to celebrate my roommate's 28th birthday. She had a solid crew of people show up to and we all had such a fun time! We drank all the drinks, took all the pics/snaps/booms/etc. and after a solid seven hours of countless vodka waters with a splash of cranberry, I took my drunk ass home.  From there, I proceeded to rip open the bag of cashews that I'd just bought from TJ's and climb into bed naked, though I did wash my face, brush my teeth AND tie my hair back. Go me.

Anyway, now that yall have a pretty thorough rundown of the events that took place over the weekend, I wanted to give you a peak into what I plan on eating throughout the week that'll get me back on track and feeling fabulous from the inside out. 

Breakfast: Perfect Fit Protein + 1 Cup Almond Milk + Banana

Snack # 1: 2 tbsp PB2 + 1 cup Carrots

Lunch: Garlic Pineapple Stir-Fried Quinoa 

Snack # 2: 1 Cup Edamame 

Dinner: Hearty Cocoa Black Bean Burgers

Snack 3: Probably a spoonful of Peanut Butter :) 

I started off by cooking my lunches. I recently purchased The Minimalist Baker's Everyday Cooking, cookbook and to say I'm already obsessed would be an understatement! Get this, every dish has no more than 10 ingredients and take about 30 minutes TOTAL to make, that's including prep time! The real kicker though, is EVERY SINGLE recipe has the nutritional facts provided on the last few pages of the book! Yall, this cookbook has already changed my life. Once I was done cooking my lunches, I placed it into little to-go containers so I could quickly grab them on my way out the door in the AM.

From there I "attempted" to make my breakfasts, which I planned on being a few Tone it Up, Perfect Fit Protein pancakes. However, I fucking failed and had to change it up unexpectedly, hence the pretty lame bfast of a protein shake and a damn banana. (insert eye roll) 

Gathering my snacks was pretty easy, I just steamed some edamame that I bought frozen from Trader Joe's, bagged up some carrots, and made a few servings of PB2 Peanut Butter that I picked up on during a quick trip to Target this afternoon. Then lastly, I'll cook my black bean burgers (again a Minimalist Baker recipe) tomorrow night and save the rest of the servings for later. 

Mic drop. Meals prepped and I'm is ready to kick this week's ass. Now I know that I'm not going to be this productive every Sunday, which I'm okay with. However, the times when I do have the opportunity to thoroughly prep for the week ahead, I try to make the most of it. 

The last thing that I'll leave you with in this very random blog post is, Something that's become a bit of a Sunday tradition for me, is no matter where I'm going, I make it a point to walk there. I typically never listen to music on these walks and it feels really freeing. Just me, my thoughts and the commotion (and smells) of the NYC streets. This morning, as I was walking to the East Village for brunch with a girlfriend, it dawned on me how much my life has drastically changed, while also managing to stay the same. I still have my old traditions of Sunday meal prep and have adopted new ones like banging on the hood of a taxi that's trying to run me over as I walk across the street. Either way I've really embraced this life of spontaneity and growth and change all while still remaining myself, and it's actually been pretty cool to experience.
